This is a recipe we have not yet perfected (still working on getting the salt to completely dissolve) but it is still good. When you can't eat dairy and you can't eat soy, your store-bought butter options are limited. There are a few out there but they are quite expensive and many still have some ingredients I'd rather avoid. So here's the easiest, homemade substitute I've tried so far.
Dairy-free, soy-free buttery spread
Ingredients:
- Coconut oil
- Olive oil
- Fine grain salt
Instructions:
- Fill
a 12 oz. (or however much you want to make) jar about 3/4 full with coconut oil and put the lid on.
- Put the jar
in a bowl of hot water to melt the oil.
- Once melted, add olive oil until not quite full.
- Add salt and stir or shake until it looks dissolved. Store
in the fridge.
